  • SVADU (SWEET), SHEETHA(COLD), MRIDU (SOFT), SNIGDHA (UNCTOUS), BAHULA (DENSE), SHLEKSHANA (SMOOTH), PICHCCHIL (VISCOUS), GURU (HEAVY), MANDA(SLOW), PRASANNA(PLEASING).

CHEMICAL COMPOSITION OF COW’S MILK:

  • Lactic Acid 4.5%

  • Sugar 4%

  • Water 87.2%

  • Food energy 66%

  • Lactose 49.54%

  • Protein Lacto-Albumin 2.8%

  • Casein 8.0%

  • Fat 3.7%

  • CHO 4.9%

  • Ash 0.7%.

Along with the above constituents, it also contains minerals like sodium, magnesium, potassium, iron, strontium etc.
